WATERMELON SALSA

| 1 small red onion 2–4 limes 1 small watermelon 1/2 cup feta cheese | 1 bunch chopped mint 1 bunch chopped parsley 1/4 cup olive oil 1/4 cup olives Black pepper to taste |
INSTRUCTIONS: |

| 1. Peel and halve the red onion and cut very fine half-moons
and put in a small bowl to steep with the lime juice. 2. Cut up watermelon into approximately 1 inch triangular chunks. 3. Combine with feta, sprigs of parsley, chopped mint, oil, olives and pepper. Recipe Courtesy of Nigella Lawson. | |
