TOMATO SOUP

| Serves 8|

INGREDIENTS:

1 tablespoon butter

2 cloves garlic, minced

2 carrots, chopped

2 celery stalks, chopped

2 quarts canned tomatoes (or equivalent fresh tomatoes and water

pinch of sugar

½ cup fresh basil, or ¼ cup dried

salt and pepper to taste

grated parmesan cheese


INSTRUCTIONS:

  1. Heat butter in skillet, sauté garlic, carrots and celery. 

  2. Add tomatoes and simmer 20 minutes. 

  3. Add sugar, basil, salt and pepper; simmer 5-10 minutes longer. 

  4. Top with parmesan.
