KALE WITH HOT BACON VINAIGRETTE

| Serves 4|

INGREDIENTS:

1 pound kale, washed and tough stems removed

4 slices bacon, chopped

1 tablespoon minced shallots or onions

2 tablespoons champagne vinegar

1 tablespoon olive oil

salt & fresh ground pepper to taste

 


INSTRUCTIONS:

  1.  Pour water in large skillet to depth of 1 inch and bring to a boil. 

  2. Add kale, cover and cook over high heat until wilted but still bright green, about 5 minutes. 

  3. Drain and rinse with cool water. 

  4. Saute bacon in same skillet until crisp.  

  5. Remove with slotted spoon and drain on paper towels. 

  6. Add shallots to the bacon fat and cook 2 minutes, stirring constantly. 

  7. Whisk in the vinegar and oil. 

  8. Add drained kale to skillet and toss to coat with vinaigrette. 

  9. Season with salt and pepper.  Scatter bacon over the kale.
