GREENS WITH WALNUTS, BLOOD ORANGE & BALSAMIC VINAIGRETTE



INGREDIENTS:

8 cups frisee, escarole, radicchio & lettuce, washed & chopped bite size

1 blood orange, peeled & chopped 1/2 inch pieces

6 dates, choped 1/4 inch pieces

1/4 cup toasted walnuts

1 Tbsp balsamic vinegar
2 Tbsp olive oil
2 tsp citrus juice
1 tsp maple syrup
pinch of fresh black pepper & salt, to taste

2 Tbsp goat cheese

INSTRUCTIONS:

  1. Prepare & combine ingredients on left in a large bowl, with greens on the bottom .

  2. In a small jar or bowl with lid, combine vinaigrette dressing ingredients on right, except goat cheese, shake well. 

  3. Drizzle vinaigrette dressing over greens mix, and toss well.

  4. Crumble goat cheese on top of salad and serve immediately. 

    Note:  This is a versatile salad and you can use whichever greens you prefer, as well as fruit, cheese and nuts.  Be creative!  The toasting of the nuts adds a little sweetness and warmth, but it's not necessary.  Enjoy!
