CHILLED MARINATED CAULIFLOWER

| Serves 6|

INGREDIENTS:

1 medium cauliflower, broken into florets

¾ cup olive oil

¼ cup lemon juice

2 medium garlic cloves, crushed

½ teaspoon salt

¼ teaspoon pepper


½ cup minced onion

½ cup chopped fresh parsley or 2 tablespoons dried parsley

2-3 fresh leaves basil, minced, or ½ teaspoon dried basil

1 packed cup coarsely grated carrots

INSTRUCTIONS:

  1.  Combine ½ cup water, cauliflower, olive oil, lemon juice, garlic, salt, and pepper in large saucepan. 

  2. Bring to boil, reduce heat, cover, and simmer until cauliflower is tender 10-15 minutes. 

  3. Transfer to serving bowl and chill. 

  4. Just before serving, mix in remaining ingredients.
