CABBAGE SLAW

| Serves 10-15|

INGREDIENTS:

1 head red or green cabbage

1 pound carrots

1 bunch cilantro

1/3 cup fresh lime juice

1/3 cup apple cider vinegar

2 tablespoons salt

1 tablespoon ancho chili powder

Picnic

1/3 cup fresh lime juice

1/3 cup apple cider vinegar

2tablespoons salt

1tablespoon ancho chili powder

Asian

1 teaspoons extra virgin olive oil

1/4 cup rice vinegar

3/4 teaspoon sesame seed oil

Garnish (optional): 1 teaspoons chopped fresh cilantro leaves, or as desired

1 tablespoon toasted sesame seeds (see directions below for link on how to do this)

Creamy

1/2 tsp. salt
1/4 black pepper
1/2 c. plain yogurt
1/2 tsp. garlic powder
3 tbsp. lemon juice


INSTRUCTIONS:

  1. Quarter and core cabbage. 

  2. Slice thinly by hand or in food processor. 

  3. Peel and grate carrots. 

  4. Chop cilantro. 

  5. Toss all ingredients together.  Let stand one hour before serving. 

  6. Toss again.  Serve as garnish for tacos or picnic salad.
